Ingredients
1/4 cup chia seeds
1 cup unsweetened almond milk or light coconut milk
1 teaspoon pure vanilla extract
1 tablespoon honey or pure maple syrup (optional, depending on taste)
1/2 cup diced mango
1/2 cup diced pineapple
1/4 cup sliced strawberries
Fresh mint leaves (for garnish)
A sprinkle of unsalted chopped pistachios or almonds (optional)

Instructions
In a bowl, whisk together the chia seeds, almond milk, vanilla extract, and honey (if using). Stir very well to prevent clumping.
Cover and refrigerate for at least 3 hours, or overnight, until the mixture thickens into a pudding-like consistency.
Once set, stir the chia pudding to loosen it slightly. Spoon a layer of chia pudding into small glasses or jars.
Add a layer of diced mango and pineapple. Add another layer of chia pudding, then top with sliced strawberries.
Sprinkle a few chopped pistachios or almonds on top for a little crunch. Garnish with fresh mint leaves for a refreshing finish.
