
Ingredients:
- 1 cup fresh strawberries, sliced
- 1 cup fresh blueberries
- 1 small orange, peeled and segmented
- 1 cup low-fat plain Greek yogurt (unsweetened)
- 1 teaspoon honey or agave syrup (optional)
- 1 teaspoon fresh orange zest
- 1 tablespoon chopped fresh mint (optional)
- 2 tablespoons unsalted, roasted chopped almonds (optional for crunch)
Instructions:
- Prepare fruit: In a bowl, gently toss strawberries, blueberries, and orange segments together.
- Flavor yogurt: In another bowl, mix the Greek yogurt with honey (if using) and orange zest.
- Layer the parfait: In small glasses or bowls, layer a spoonful of yogurt, then a spoonful of fruit. Repeat until the glass is filled.
- Top it off: Garnish with fresh mint and sprinkle with chopped almonds if desired.
