
Ingredients
1 thick round slice of seedless watermelon (about 1 inch thick)
1/2 cup low-fat plain Greek yogurt
1 teaspoon pure vanilla extract
1 tablespoon honey (optional)
1/4 cup fresh blueberries
1/4 cup fresh raspberries
1/4 cup sliced strawberries
Fresh basil leaves, thinly sliced
Crushed unsalted pistachios (optional for crunch)
Instructions
Lay the watermelon slice flat on a cutting board and pat dry with a paper towel.
In a small bowl, stir together the Greek yogurt, vanilla, and honey until creamy.
Spread the yogurt mixture evenly across the top of the watermelon, like a “pizza sauce.”
Top with an even scattering of blueberries, raspberries, and sliced strawberries.
Sprinkle with fresh basil ribbons for a fresh, slightly herby twist.
Optionally, sprinkle a few crushed pistachios over the top for a little texture.
