2 medium apples (like Honeycrisp or Gala), cored and sliced
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 tablespoon honey or pure maple syrup (optional)
1/2 teaspoon vanilla extract
1/4 cup unsalted sliced almonds, lightly toasted
1/2 cup low-fat plain Greek yogurt
Fresh mint leaves for garnish (optional)
Instructions
Preheat oven to 375°F (190°C).
In a bowl, toss the apple slices with cinnamon, nutmeg, honey (if using), and vanilla extract.
Spread the apples in a single layer in a small baking dish. Cover with foil and bake for 20–25 minutes until tender but not mushy.
Toast the sliced almonds in a dry skillet over medium heat for 2–3 minutes until lightly golden. Set aside.
Spoon the warm baked apples into serving bowls. Top with a dollop of Greek yogurt, sprinkle with toasted almonds, and garnish with fresh mint if desired.
Serve immediately for a cozy, naturally sweet, and heart-healthy dessert.
