Ingredients:

  • 1 ripe avocado
  • 1 cup cherry tomatoes, diced

  • 2–4 slices whole-grain or multigrain bread, lightly toasted

Instructions:

  1. Prepare topping: In a bowl, combine diced tomatoes, red onion, basil, balsamic vinegar, olive oil, and black pepper. Toss gently.
  2. Mash avocado: In a separate bowl, lightly mash the avocado (leave it a bit chunky).
  3. Assemble: Spread mashed avocado over toasted bread slices.
  4. Top it off: Spoon the tomato mixture over the avocado.
  5. Serve immediately: Optionally, drizzle with a little more balsamic vinegar before eating!
