Ingredients:

  • 4 cups baby arugula
  • 1 cup fresh strawberries, hulled and sliced
  • 1/3 cup raw walnuts, toasted lightly
  • 1/4 cup crumbled goat cheese or feta (optional, look for low-sodium if available)
  • 2 tablespoons fresh basil, thinly sliced
  • 1 tablespoon olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey (optional, for sweetness)
  • 1/2 teaspoon black pepper

Instructions:

  1. Make the balsamic reduction: In a small saucepan over low heat, gently simmer the balsamic vinegar and honey (if using) for about 5–7 minutes until it thickens slightly. Let cool.
  2. Assemble the salad: On a large platter or bowl, layer the arugula, strawberries, toasted walnuts, basil, and goat cheese/feta if using.
  3. Dress: Drizzle olive oil lightly over the salad, followed by the cooled balsamic reduction.
