
Ingredients:
- 2 large cucumbers, peeled and diced
- 1 ripe avocado
- 1/2 cup plain low-fat Greek yogurt (unsweetened)
- 1/4 cup fresh dill, chopped
- 1 tablespoon fresh lemon juice
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground cumin (optional for a warm note)
- Ice cubes (optional, for extra chill)
- Fresh dill sprigs and thin cucumber ribbons for garnish
Instructions:
- Blend: In a blender, combine cucumber, avocado, Greek yogurt, dill, lemon juice, olive oil, garlic, black pepper, and cumin. Blend until smooth.
- Adjust consistency: Add a few ice cubes and blend again if you want it colder and slightly thinner.
- Chill: Refrigerate for at least 1 hour to allow flavors to meld.
- Serve: Pour into chilled bowls. Garnish with fresh dill and a few delicate cucumber ribbons.
