
Ingredients:
- 1 1/2 cups fresh pineapple, finely diced
- 1 large cucumber, julienned or thinly sliced
- 1/2 cup shredded red cabbage
- 1/4 cup shredded carrots
- 2 tablespoons chopped fresh mint
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon honey (optional, if pineapple isn’t super sweet)
- 1/2 teaspoon black pepper
- 1/4 teaspoon allspice (for a subtle Caribbean spice)
Instructions:
- Make the dressing: In a small bowl, whisk together lime juice, olive oil, honey (if using), black pepper, and allspice.
- Assemble the slaw: In a large bowl, combine pineapple, cucumber, cabbage, carrots, mint, and cilantro.
- Toss: Drizzle the dressing over the slaw and toss gently until everything is coated.
- Chill: Refrigerate for about 20 minutes before serving to allow flavors to meld.
