
Ingredients:
- 1 ripe avocado
- 1 cup cherry tomatoes, diced
- 1 tablespoon red onion, finely minced
- 1 tablespoon fresh basil, chopped
- 1 tablespoon balsamic vinegar (low-sodium brand if possible)
- 1 teaspoon olive oil
- 1/2 teaspoon black pepper
- 2–4 slices whole-grain or multigrain bread, lightly toasted
Instructions:
- Prepare topping: In a bowl, combine diced tomatoes, red onion, basil, balsamic vinegar, olive oil, and black pepper. Toss gently.
- Mash avocado: In a separate bowl, lightly mash the avocado (leave it a bit chunky).
- Assemble: Spread mashed avocado over toasted bread slices.
- Top it off: Spoon the tomato mixture over the avocado.
- Serve immediately: Optionally, drizzle with a little more balsamic vinegar before eating!
